Gary Greene

General Manager

Gary Greene has been managing upscale restaurants for over 13 years, starting with his time in Las Vegas working for celebrity chef, Wolfgang Puck. Gary proudly joined Bob’s in the fall of 2021 and is eager to have you join him for your special occasion, corporate event or dinner with friends and experience the personable and warm service that Bob’s at Omni Dallas is lauded.


Gary recommends trying the 12 oz Prime Filet with a heavy sear and Skillet Potatoes. His favorite wine pairing is a red Rhone or an Eagle Rare Old Fashioned!

Edwin Gavelan

Chef

Chef Edwin Gavelan started with Bob’s in 2015 and worked his way up to becoming Executive Chef in 2020. During Edwin’s time with Bob’s he has been a lead trainer for several openings at locations such as Bob’s Amelia Island, La Costa, Barton Creek and many more. Due to his expertise, new Chefs are sent to train with Chef Edwin to learn Bob’s unique way of delivering outstanding and memorable meals.


Chef Edwin was born in Trujillo, Peru and cultivated his cooking expertise at the Art Institute of Dallas. When not leading the kitchen team at Bob’s, you can find Chef Edwin rooting on his favorite team, the Dallas Cowboys!
