Reservations are strongly recommended due to the requirements of limited seating. We will continue to provide Bob’s signature quality and service curbside, in addition to the limited dine-in seating.
Wine & alcohol can also be purchased for curbside delivery with the purchase of an entrée. We encourage you to call us for hours of operation and dine-in details. Greg Van de Velde
Greg Van de Velde is the General Manager of Bob’s Steak & Chop House Carlsbad. With over 20 years of experience, Greg is an expert in facilitating best-in-class California dining from managing the front of house operations to menu and wine list development. While you’re here, be sure to try Greg’s favorite Bob’s meal: the South African lobster tail. This lobster is incredibly juicy, tender, and accentuated by a subtle, signature sweetness.
Before joining the Bob’s team, Greg was an owner and consultant at Culinary Conceptions, General Manager at Bottega Americano, and General Manager and Maitre d’Hotel of San Diego’s renowned Bertrand at Mister A’s. Greg is an active member and prior board member of the California Restaurant Association and earned his degree from UC San Diego.
Chef Justin Huntington serves as the Executive Chef at Bob’s Steak & Chop House Carlsbad where the pace and sound of a busy kitchen drive him and his team to deliver culinary excellence. Chef Huntington began his professional culinary journey at just 14 years old when he learned to grill on mesquite wood at the fish exchange in Murrieta.
He later attended a culinary program in Oklahoma, and upon returning to California, earned his stripes as lead cook at Epazote and Cilantros. Before joining the Bob’s team, Chef Huntington worked as Sous Chef at the Steelhead Brewery in Fisherman’s Wharf, at the Top of the Cove and Omni San Diego, then later as Executive Sous Chef at Estancia La Jolla and Banquet Chef at Omni La Costa Resort & Spa.
